Here’s a quick one to throw together!
Ingredients:
- 2 cups flour
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 1 tablespoon sugar plus extra for sprinkling
- 2 tablespoons butter
- 2 tablespoons shortening
- 1 cup heavy cream
- 1 tablespoon melted butter
- whipped cream
- berries, lemon curd, or other toppings as desired
Preheat oven to 450 degrees. Line a baking sheet with parchment.
Combine flour, baking powder, salt, and sugar in a large bowl and stir together. Cut in the butter and shortening.
Stir in the cream. Spoon the dough into 4-5 rough balls on the lined sheet, depending on how many people you’re serving. I think they’d be pretty huge if you only made 4. Brush or drizzle the melted butter over the dough, then sprinkle with sugar.
Bake for 15 minutes, or until brown. If you only make 4, it could take a few minutes longer.
Let cool on the pan, then split with a knife and fill with toppings of your choice.

Whipped whatever was left in the cream carton with a few spoonfuls of powdered sugar, topped with some lemon curd.
