As promised Monday, something to do with graham crackers! Bonus: It’s something chocolatey!
- 12 ounces milk chocolate, chips or finely chopped
- 1/2 cup heavy cream
- pinch salt
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 6-7 graham crackers, roughly crushed
Put the chocolate in a glass or metal bowl and set aside.
Combine the cream and salt in a small saucepan and bring to a high simmer. Pour the hot cream over the chocolate, let rest briefly while the chocolate melts, then stir together until smooth. Stir in the vanilla, as well.
Put the chocolate mixture in the refrigerator and chill, stirring every twenty minutes, until it is thickened enough that you can add the marshmallows without them all sinking to the bottom. When the chocolate can hold its shape after being stirred, it should be firm enough.
Add the marshmallows and stir in well. Cover, and refrigerate overnight.
The following day, scoop out cherry-sized portions of the chocolate mixture.
Roll into balls in your hands, then roll in the crushed graham crackers.
Chill half an hour, and enjoy.
These stayed a bit softer than I expected, but I love the flavors. I think I got about 16 of them out of this.
A good way to go, when you don’t have a campfire!
S’mores Truffles
From Fields of Cake and Other Good Stuff.
